In 2015 the European Food Safety Authority published a risk assessment for Acrylamide in food. The assessment confirmed previous findings that acrylamide levels found in food could increase the risk of cancer for consumers.

So far, there are no maximum levels in Europe for acrylamide in food. EU regulation 2017/2158, which came into force in April 2018, establishes mitigation measures and benchmark levels for reducing the presence of acrylamide in food.

This new legislation will require food business operators to put in place simple, practical steps to manage and monitor acrylamide within their food safety management systems.

There are several challenges to consider when developing a method to monitor for acrylamide in processed foods.

It is a highly polar, water soluble compound. Processed food matrices are complex and matrix components co-extract with the analyte which can interfere with the analysis.

In this webinar, we present the results for an internal validation of a method for the determination of acrylamide in a range of representative processed foodstuffs.
